In a large pot, boil the herbs needed for the broth, namely celery, carrots, onions and tomato paste.
Wash the lampredotto well and add it to the broth, then season with salt and pepper and cook for an abundant hour.
Meanwhile, prepare the salsa verde by chopping the hard-boiled eggs, parsley and capers.
When the time necessary to cook the lampredotto has elapsed, drain it and cut it into strips. Serve it with the salsa verde and the hot sauce.
